What is lyophilization and how does it work?

Lyophilization, also known as freeze drying, is a preservation process in which the product is first frozen and then its water is removed by sublimation, meaning it goes straight from solid to gas. This puts the bacteria into a dormant state without damaging their structure or function, allowing for long-term storage without preservatives.
What are the main advantages of lyophilization compared to fresh yogurt?

Lyophilization is convenient because it allows products to be stored at room temperature, making them easy to transport and keep. While fresh yogurt may be more effective thanks to live cultures, freeze-dried products offer greater stability and a longer shelf life, which helps preserve their effectiveness outside a controlled environment.
How do live bacteria stay active after freeze-drying, and how can this be shown?

During freeze-drying, live bacteria are frozen and dehydrated, which puts them into a dormant state while preserving their structure and ability to reactivate when rehydrated. You can demonstrate their effectiveness not only with lab tests (which show growth and reproduction after rehydration) but also with a simple home experiment. Make a starter using Narex Sachets: add the sachet contents to milk and leave it in a warm place. If the bacteria are active, the milk will ferment properly. As a control, keep another portion of milk under the same conditions without Narine – it will not ferment and will remain unchanged. This is a practical way to confirm the viability of freeze-dried bacteria.
How do I make yogurt from a freeze-dried starter?

To prepare yogurt from a freeze-dried starter, mix the contents of the sachet containing the bacteria with the appropriate amount of milk, following the instructions on the package. Then incubate the mixture in a warm place to allow the bacteria to ferment the milk.
Why is it not recommended to make more than five generations of starters from a single batch?

Reusing the same culture for many rounds can weaken it. With each re-inoculation the microbial balance can shift, wild microbes may creep in, and the bacteria can lose vigor. After about 4 to 5 cycles, you often see slower acidification, weaker texture and flavor, and lower viable counts. For consistent quality and benefits, start again with a fresh freeze-dried starter.
